Two soft, buttery vanilla sugar cookies filled with festive holiday sprinkles for an easy small batch Christmas treat!

Ingredients

Dough
  • 2 Tbsp (28g) unsalted butter, softened
  • 2 Tbsp (24g) granulated sugar
  • 1 egg yolk
  • ¼ tsp vanilla extract
  • ⅓ cup (50g) all purpose flour
  • 1 tsp cornstarch
  • ¼ tsp baking soda
  • ⅛ tsp salt
  • 2 Tbsp sprinkles of your choice (I recommend jimmies, the long, rod shaped sprinkles)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the softened butter and sugar until creamy.
  3. Add the egg yolk and vanilla extract. Whisk for 1–2 minutes, until the mixture looks smooth and fluffy.
  4. Add the flour, cornstarch, baking soda, and salt. Fold together until just combined.
  5. Add the sprinkles and gently fold them into the dough.
  6. Divide the dough into two equal portions and shape each into a round mound. To smooth out the edges, place a glass around each mound of dough and move it in a circular motion and then lightly press down with the bottom of the glass to flatten it slightly.
  7. Refrigerate the cookies for 5 minutes.
  8. Bake for 10–12 minutes. Allow the cookies to cool on the baking sheet before serving.
