This salted caramel blondie skillet is a decadent single serve dessert loaded with creamy white chocolate chips and swirls of rich caramel throughout. It's finished with flaky sea salt and a scoop of vanilla ice cream. This is the perfect warm, gooey treat when you’re craving something sweet without making a whole pan!

Ingredients

Blondie Batter
  • 2 Tbsp (28g) unsalted butter, melted
  • 3 Tbsp (36g) light brown sugar
  • 2 tsp (8g) granulated sugar
  • 1 egg yolk
  • 1/4 tsp vanilla extract
  • 1/4 cup (35g) all purpose flour
  • 1/8 tsp baking powder
  • 1/8 tsp salt
  • 2 Tbsp mini white chocolate chips
Caramel Sauce & Toppings
  • 5 Werther’s Original chewy caramel candies
  • 1 tsp heavy cream
  • Additional caramel candies, as desired, for drizzling over the ice cream
  • Flaky sea salt, for topping

Instructions

  1. Preheat the oven to 350°F. Grease a 5 inch cast iron skillet.
  2. In a medium bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined.
  3. Whisk in the egg yolk and vanilla extract.
  4. Add the flour, baking powder, and salt. Stir until just combined, being careful not to overmix.
  5. Fold in the white chocolate chips.
  6. Transfer half of the batter to the prepared skillet, setting aside the remaining batter.
  7. In a small microwave safe bowl, combine the unwrapped caramel candies and heavy cream. Microwave in 20 second intervals, stirring between each, until the caramel is melted and smooth.
  8. Drizzle half of the melted caramel over the batter in the skillet. Spread the remaining batter over the top, then drizzle with the remaining caramel. Use a knife or chopstick to gently swirl the caramel throughout the batter.
  9. Bake for 18–20 minutes, or until the edges are set and the center is slightly gooey. Allow to cool briefly before serving.
  10. Serve warm with a scoop of vanilla ice cream, flaky sea salt and additional caramel drizzle, if desired (see notes below on caramel drizzle!).

Notes

For the most accurate and consistent results, I recommend measuring your ingredients in grams using a kitchen scale. Baking is a science, and weighing your ingredients helps ensure the perfect blondie every time!

Optional Caramel Drizzle (Topping)

For extra caramel over your vanilla ice cream, combine 2 Werther’s Original chewy caramel candies with ½ tsp heavy cream in a microwave safe bowl. Microwave in 20 second intervals, stirring between each, until melted and smooth.  Pour over ice cream with some flaky sea salt and enjoy!
